11000 ft/minute is about 2 miles a minute or 120 miles an hour. The rate of fall would be very similar to parachutists falling in the "standard" position (flat, arms out, legs bent). The passengers and crew would definitely have felt "light" at the beginning of the plunge as the plane accelerated downward. After the acceleration downward stopped though, and the plane was falling at a steady rate, the passengers would have felt gravity and felt "normal" weights, just like in a fast, downward moving elevator.
